Try swapping cornflakes with gluten-free kind if required.

Syrup

You can’t make cornflake cakes without syrup. And although golden syrup is already vegan and gluten-free, you may want to change it. You can use rice malt syrup for a milder sweetness. It is plant-based, but it does contain glutens.

Maple or agave syrup is unsuitable due to its more liquid consistency and will absorb the cornflakes more. However, depending on the brand, you could create soft, chewy cornflake clusters.

Butter

Make cornflake cakes without butter by substituting them with dairy-free margarine.

Dairy

Replace dairy-based cooking chocolate with dairy-free chocolate for vegan crispies.

Storing

These golden syrup cornflake cakes, once set, should be stored in an air-tight container sealed container to retain freshness and flavour, keeping other food odours away. You can make these chocolatey cornflake cakes up to 3 days ahead of time, but they are best to consume on the day they are made. They will remain crisp and crunchy in the fridge for a couple of days, but they will steadily begin to soften over time.

Keeping them at room temperature is not recommended as the fat from the chocolate and butter will soften and absorb into the chocolate cornflakes, eventually creating a soft cake and unsetting the chocolate clusters.

Freezing these cornflake cakes is not ideal too: they’re too hard to eat straight from the freezer, and allowing them to reach room temperature will make the clusters soft, lacking crunchiness and the butter to leach.

Chocolate Cornflake Cakes

Ingredients

150 g cooking milk chocolate, small broken pieces

50 g butter

2 tbsp golden syrup

100g cornflakes

30 g white chocolate chips

30g milk chocolate chips

30 g dark chocolate chips


Instructions

1. Stand 12 paper cupcake cases on a tray or in a cupcake tray.

2. In a large non-stick saucepan, place the butter, chocolate, and golden syrup together on very low heat. Stir with a wooden spoon to combine.

3. Heat until the chocolate has fully melted and creates a thick sauce.

4. Remove off heat and set aside. Allow the melted chocolate mixture to cool slightly for a minute or so.

5. While the sauce is cooling, gently pour in the cornflakes.

6. Mix the chocolate and cornflakes, making sure to coat all the flakes with the chocolate mixture.

7. Continue stirring until all the cornflakes are fully coated.

8. Spoon the chocolate coated cornflake mixture evenly between the cases into the already pre-lined cupcake tray.

9. Gently press down so that the flakes stick together.

10. If you wish to add any toppings or additional ingredients, now is the time to do so.

11. Place the whole tray into the fridge to set.

12. Once set, you can remove the cornflake cakes from the cupcake cases or, if you like, leave them in the paper cases. You can also place the chocolate clusters in a container or resealable food bag and store them in the fridge.
